I can't work out whether the UBNT Bullet uses PoE mixed with data (i.e. pairs 1/2 and 3/6), or uses pairs 4/5 and 7/8 (not used for data in 10baseT or 100baseTx) for power (both are allowed by IEEE802.3af). Anyone enlighten me? Also, what's the polarity?

It's not 802.3af compliant, it's passive PoE using pairs 4,5,7,8.

UBNT gear is not...NOT 802.3af compliant.
It was never intended to be.
In theory you should be able to connect a UBNT to a 802.3af and the PoE port will attempt to discover if the UBNT is 802.3af compliant. If it isn't, then the PoE refuses to send power.
But if the re-discovery isn't properly done, it will dump the full 48 volts into the UBNT and blow the radio.
An exception may be seen in some specialized PoE implementations that go beyond the standard, i.e provide 12 volts if necessary.

Its not proprietary, lots of 12 volt devices use 12 volts on the spare wht/blu (+12 volts) and wht/brn (ground) pairs.
UBNT's PoE is a standard practice in the industry, but it is not part of the PoE af standard.
12 volts on the spare wht/blu & blu/wht (+12 volts) and wht/brn & brn/wht (ground) pairs is what the UBNT PoE uses.
